Mateo NievesMateo Nieves
At the winery, every vintage is aged carefully in French and American oak barrels, respecting the time each wine needs.
The process combines traditional techniques with the oenological judgment of our team, led by Juan and Silvia Ayuso: controlled fermentation, barrel selection, and constant monitoring of every vintage until it is ready to leave the winery.

Winemaking

How we work

Selection

Careful grape selection both in the vineyard and on the winery's sorting table.

Gravity

Gravity-fed winemaking: we use no mechanical methods, bringing the grapes in with care and respect.

Native yeasts

Native yeasts, minimal intervention.

Barrels

Barrels chosen according to the type of wine we want to make, for a greater or lesser imprint of the wood on the result.

The Process

  1. 01

    Harvest

Grapes are hand-picked at the optimal ripening moment, plot by plot, in 12 to 20 kg crates under thorough control.

  2. 02

    Fermentation

Controlled fermentation with the grapes’ own yeasts, at a constant temperature to preserve aroma and colour.

  3. 03

    Aging

Rest in French and American oak barrels for as long as each wine needs.

  4. 04

    Bottling

Bottling and storage in temperature-controlled crates. We take the greatest care over the choice of materials for impeccable packaging.
